2019 Cabernet Sauvignon
A classic Yarrh cabernet, and one of our best. Two years in the cellar mean this wine is ready to go, but still a little closed. Loads of dark fruits temper the firm tannins. A wine that demands a second glass!

Big flavours and firm tannins require strong flavours to match. Roast beef, grilled mushrooms, strong cheeses, chocolate.
CELLARING
The most cellar-worthy wine in our range. We mature for two years before releasing, so while ready to drink on release, the wine will continue to improve for another 5 years, then its up to your personal preference – we’re now predicting 10+ years of careful cellaring will be rewarded.
Additional Information
Our first vines planted in 1997 are now old and gnarly (dude), and really define the Yarrh house style – lean, restrained, savoury, food friendly and true to variety and place. The older these vines get the more characterful the wines become. Keeping the crop low, and maturation in the cellar for two years, produces wines of intense colour, dark fruits and firm, pronounced tannins that age beautifully. Blackberry, cassis, cigar box, tobacco, spice, black olive and a hint of mint are typical. A sentimental favourite of ours, and one for the cellar.
GROWING
Estate grown. Properly ripening Cabernet in a cool climate region can be tricky, but we planted on a warm, rocky ridge and keep the crop low, getting past any risk of green characters. It’s a tough, lean vine that tolerates difficult seasons well. Clay loam over shale.
MAKING
100% crushed fruit, cold soak for 3 days, wild (no added yeast) fermentation, 40/60 new/old oak French and Hungarian oak for 12 months, then held back 12 months before release.
